♂ Indian Black Salt (Kala Namak) - Where To Buy?

 
 
  
What is black salt?
Kala Namak or Himalayan black Indian salt is a type of rock salt, salty and pungent-smelling condiment used in South Asia. The condiment is composed largely of sodium chloride with several impurities lending the salt its colour and smell, the smell is mainly due to its sulphur content. When in whole, it forms brownish pink to dark violet translucent crystals and, and when ground into a powder, it is light purple to pink in colour. The raw material for producing Kala Namak was originally obtained from natural halite from mines in Bangladesh, India, Nepal and Pakistan.


How to use black salt?
It is used extensively in South Asian cuisines and appreciated by vegans in dishes that mimic the taste of eggs. To me, this is the best natural egg replacer for cooking, not baking of course. ♂ Raw Nuts (Cashew Almond Walnut Peanut Brazil) - Where To Buy?


Many readers wrote to me and asked where I usually get raw cashews, almonds, walnuts and other types of nuts in Singapore, here is what you ask for. I got most of my non-organic nuts from Mustafa Center, I realised it is much cheaper compared to those from provisional shop and even Pasir Panjang Wholesale CenterUncle Cook's is the in-house brands of Mustafa and the nuts are mainly from USA and Brazil.

Nuts are great whole food that provide numerous beneficial health qualities, it is high in protein, fibre and good fats for lowering bad cholesterol, reducing inflammation and good for the heart.

I always stock up 1kg of each type of nuts in my store. I used these nuts substantially in my vegan baking and cooking, or simply roast it to make a prefect healthy movie snack, simply endless use of these nuts! Refer below where I elaborate more about my usage for each type of nuts.

Storage tips: Everyone knows this theory that the bigger the quantity you buy, the more the value for money, but make sure you know the proper way to store these goodies. Nuts have a high oil content and this leads to a quick break down when left at room temperature, and they spoil more quickly in warmer climates like Singapore. Nuts are good at room temperature for about one week when opened but they need to be sealed airtight and refrigerated to maintain freshness.  It is difficult to detect if the nuts are gone bad, however some tell-tale signs are they are soft when chewed or the taste may change altogether. Uncle Cook's: California Almonds
I usually substitute macadamia, hazelnuts with almond in baking because it is more affordable in Asia, and because it has a really awesome nutty fragrance.

Uncle Cook's: King of Cashew
I never know cashew nuts can used in so many ways in vegan cooking and baking until I started to have my own kitchen. Cashew are the most widely used nuts in my pantry. I used it for making vegan cream cheese, non-bake cheesecakes and some other vegan baking, and making Vegan Tuna that tastes better than real tuna. I also use it in soup recipes to replace diary milk.

    ♂ Whole Wheat Flour - Where To Buy?

    Pillsbury: Chakki Atta 100% Whole Wheat Flour
    Pillsbury is one of the many brand under a reputable flour producer in USA,  General Mills, it is well recognized internationally, you can get this brand in almost every countries on earth. Pillsbury Chakki Fresh Atta was introduced to India in 1998. It was a high-quality, nutritious alternative to the age-old tradition of purchasing grain and having it ground at the local “chakki” or flour mill. Pillsbury Chakki Fresh Atta is 100 percent whole wheat grain atta with fiber.

    Before I elaborate more about this brand, let me share with you one brand of whole wheat flour that you might want to avoid in Singapore, at all costs!

    I have tried many brands of whole wheat flour, including some India-produced whole wheat flour. But this brand contains live white worms, yes, read.. LIVE MOVING worms at different packets with different batch numbers, I bet the whole production plant is contaminated. And that brand is 'House Brand' by KNP Trading Private Limited. To make things worse, it is readily available at our major supermarkets in Singapore: NTUC and Sheng Siong! Good luck to all the faithful consumers for this brand, if they do not sift their flour, they will never know it.
    The best part is the company replied that those are weevils and is 'perfectly common and normal' in whole wheat flour because it is less processed, oh please! Weevil does not look like worms at the first place and that is common only in their package, and not other brands, I do not see a single worm or weevil in my favourite Pillsbury brand. So people, think twice before you buy House Brand brand of whole wheat flour.
     

    ☼ Tips:
    As whole wheat flour is less processed unlike refined white flour, it is still whole grain. Always sift whole wheat flour for traces of 'foreign objects', if you see some grain after you sift, do not be alarmed, those are likely to be the bran. That is perfectly normal, just throw it away.

    What do I use whole wheat flour for?
    When using such regular whole wheat flour in baking, it will be denser because of the lack of gluten, it is important to add vital wheat gluten to whole wheat yeast bread to improve the texture and elasticity of the dough. I make my own bread but I do not use this flour because 100% whole wheat bread will be very dense. I will do a post soon on the whole wheat bread flour that I use for bread-making and where to buy.

    I use this whole wheat flour for making pizza crust, pancake and baking brownie as well as naans and roti for Indian cuisine. For baking such as cake and cookie and pastry, I use this whole wheat pastry flour.

    Pillsbury: Gold Atta 100% MP Sharbati
    Do not mix up Pillsbury Chakki Atta 100% Whole Wheat Flour with another of their product Gold Atta 100% MP Sharbati. Although both are 100% whole wheat, Gold Atta is more suitable for making indian roti, and not so much for baking or making 100% whole wheat bread because it will be dense.

    Compared to Giant, Sheng Siong and various supermarkets, none of them can beat the prices at Mustafa Center. Well I guess it explains because most of the Indians in Singapore go there to buy groceries including whole wheat flour which is heavily used in Indian cuisine. If you are not expecting to use much within a short period of time, do not be tempted to get the 5kg packet for savings, it is better to keep to the packaging of 1 to 2 kg to ensure freshness. After opening, store flour in fridge. Whole wheat flour are less processed and is whole grain, thus it is unlike refined white flour which you can just place in a cool dry place. If you have no space in the fridge, place flour in air-tight container in cool dry spot for maximum 3 months.

    So this Pillsbury whole wheat flour (SGD1.40 per kg) is even cheaper than the general refined white flour (usually SGD3 per kg) that we mostly use, and for better health, I do not see the reason why I am keeping any refined white flour in my pantry.
     
    Most people hear that refined white flour is bad, but they do not know much about why and how bad they are. Some know that white flour lacks vitamins and minerals which whole grains flour have.  Well, just lacking those vitamins and minerals don't sound that bad bad, right? There are many other poisonous and fattening effect of refined white flour which are not known to public. Bread, cake, all-purpose, wheat and top flour are all refined white flour that is harmful to the body. Most Asians are not receptive to whole grain flour unlike the West, because we are so used to having soft fluffy bread. However, this can also be achieved using whole wheat bread flour.
     
    If you are baking, do not use this regular whole wheat flour. Use whole wheat pastry flour (SGD4.60 per kg) instead, click to know more and where to buy. What is the difference? Whole wheat pastry flour is milled from low-protein soft spring wheat, whereas regular whole wheat flour is milled from hard red wheat. The softer wheat has a lower protein content than wheat and makes a desirable flour for pastry baking.

    We are all aware that refined white/bread flour are harmful. During the refining process, whole wheat grain are heavily processed that almost all the vitamins, minerals and protein are lost. Even if it is enriched flour, it only adds few vitamins and nothing else.  During the refining process, the endosperm is the only portion of the grain used to make white breads, pastas etc. When the bran and germ are removed, one quarter of the protein content is lost, along with several key nutrients.
    Whole wheat grains are power packed with nutrients that are made up of the entire or "whole" grain, including the bran, germ, and endosperm.

    When it comes to baking and cooking, it is strictly no refined flour for me, especially when we already have enough of these when we are eating out. Why is refined white flour so bad? Read below. Baking with whole wheat is not as easy as baking with refined flour because of the lack of gluten, but this whole wheat pastry solve this problem.
     
    Do not confuse whole wheat pastry  flour with the regular whole wheat flour. Whole wheat pastry flour is milled from low-protein soft spring wheat, whereas regular whole wheat flour is milled from hard red wheat. The softer wheat has a lower protein content than wheat and makes a desirable flour for pastry baking.  
     
    How to use?
    I have been swearing by whole wheat pastry flour when it comes to baking, literally all sorts of baking like muffin, donuts, cookies, cakes etc, basically anything in baking. It can be used to replace any all-purpose, plain and cake flour in the recipe, 1 for 1.     I have spent more dollars on other brands of organic chia seeds thinking that I got a good deal until I saw this! The country of origin for Bob's Red Mill Chia Seeds is Australia, and being a reputable brand, I think this is indeed the best value-for-money chia seeds available here, although it is not organic.     Uses:
    Chia gel can also be used as a substitute for eggs in many baked goods. Use a proportion of 1 to 6 ratio of Chia Seeds to Water to make chia gel. Use approximately one tablespoon of chia gel to replace one large egg in your baked goods.
     
    The mild, nutty flavour of chia seed goes well with both sweet and savoury dishes. Use chia seed in puddings and smoothies, sprinkle on top of porridge and salads, and add to baked goods in place of flaxseed meal or poppy seeds.

    ♂ Powdered Egg Replacer - Where To Buy?

    
    When I first chanced upon powdered egg replacer in the local stores, I was totally astonished with such an invention! I thought it can be used in any baking and can replace any recipes with any amount of eggs but it is not true.


    Powdered egg replacer is good for beginners in baking for biding and thickening functions. When I started baking, I used this in my cookies and pancake recipe, it works also on some cakes and waffles, and making eggless custards and cream filling. It certainly works but not for recipes that call for more than 3 eggs or baking like meringues, chiffon cakes and panna cotta etc. Different egg substitutes are required for different recipes, there aren't any one magic egg substitute for everything.     Most of these powdered egg replacer are made from mainly potato and tapioca starch and other ingredients. This lead me to think if it is possible to make my own to make it purer at least without the stabilizer etc, and I found this recipe. This is a proven workable alternative and more affordable direct replacement to the store-bought powdered egg replacer.  

    Homemade Powdered Egg Replacer
    Ingredients
     90g arrowroot powder or tapioca starch or potato starch
     18g baking powder
     1/2 tsp guar gum or xanthan gum powder


    Method
    1) Whisk together all powder until well combined, set aside.
    2) Scope out 1½ tsp powder mix and add 3 Tbsp water and whisk thoroughly, it is ready for use as a egg substitute for one egg instantly!
    Storage Tip: Store unused powder mix in airtight container in cool dry place.

    At the glance from the weight and price, it may seems like this brand is more worth it than Orgran (above), but it is not the case. Because this requires one tablespoon to be equivalent to one egg whereas Orgran requires only 1 teaspoon as one egg. Take note that this is not gluten-free. Read more about this product.

    There are plenty of egg substitutes available for baking or preparing a dish that calls for eggs. If a recipe calls for three or more eggs, it is important to choose a replacer that will perform the same function (i.e. binding or leavening).

    • Egg Replacer is a reliable egg substitute for use in baking. It is available at health food stores and most grocery stores.
    • Trying to replicate airy baked goods that call for a lot of eggs can be very difficult. Instead, look for a recipe with a similar taste but fewer eggs, which will be easier to replicate.
    • Powdered egg replacers cannot be used to create egg recipes such as scrambles or omelets. Tofu is the perfect substitute for eggs in these applications.

    Tofu:
    • Tofu is great for egg substitutions in recipes that call for a lot of eggs, like quiches or custards.
    • Tofu is also a great substitute for eggs in eggless egg salad and breakfast scrambles.
    • Be sure to use plain tofu, not seasoned or baked, as a replacer.
    • When adding tofu to a recipe as an egg replacer, be sure to purée it first to avoid chunks in the finished product.
    • To replace one egg in a recipe, purée 1/4 cup soft tofu. It is important to keep in mind that although tofu doesn’t fluff up like eggs, it does create a texture that is perfect for “eggy” dishes. 

    In Desserts and Sweet, Baked Goods:
    • Try substituting one banana or 1/4 cup applesauce for each egg called for in a recipe for sweet, baked desserts. These will add some flavor to the recipe, so make sure bananas are compatible with the other flavors in the dessert.
    • If you want a lighter texture and you’re using fruit purées as an egg substitute, add an extra 1/2 tsp. baking powder. Fruit purées tend to make the final product denser than the original recipe.

    Other Egg Replacement Options
    • If you’re looking for an egg replacer that binds, try adding 2 to 3 Tbsp. of any of the following for each egg: tomato paste, potato starch, arrowroot powder, whole wheat flour, mashed potatoes, mashed sweet potatoes, instant potato flakes, or 1/4 cup tofu puréed with 1 Tbsp. flour.
     
    • 1 egg = 2 Tbsp. potato starch
    • 1 egg = 1/4 cup mashed potatoes
    • 1 egg = 1/4 cup canned pumpkin or squash
    • 1 egg = 1/4 cup puréed prunes
    • 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
    • 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
    • 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again
