♂ Powdered Egg Replacer - Where To Buy?


When I first chanced upon powdered egg replacer in the local stores, I was totally astonished with such an invention! I thought it can be used in any baking and can replace any recipes with any amount of eggs but it is not true.


Powdered egg replacer is good for beginners in baking for biding and thickening functions. When I started baking, I used this in my cookies and pancake recipe, it works also on some cakes and waffles, and making eggless custards and cream filling. It certainly works but not for recipes that call for more than 3 eggs or baking like meringues, chiffon cakes and panna cotta etc. Different egg substitutes are required for different recipes, there aren't any one magic egg substitute for everything. Most of these powdered egg replacer are made from mainly potato and tapioca starch and other ingredients. This lead me to think if it is possible to make my own to make it purer at least without the stabilizer etc, and I found this recipe. This is a proven workable alternative and more affordable direct replacement to the store-bought powdered egg replacer.  

Homemade Powdered Egg Replacer
Ingredients
 90g arrowroot powder or tapioca starch or potato starch
 18g baking powder
 1/2 tsp guar gum or xanthan gum powder


Method
1) Whisk together all powder until well combined, set aside.
2) Scope out 1½ tsp powder mix and add 3 Tbsp water and whisk thoroughly, it is ready for use as a egg substitute for one egg instantly!
Storage Tip: Store unused powder mix in airtight container in cool dry place.

At the glance from the weight and price, it may seems like this brand is more worth it than Orgran (above), but it is not the case. Because this requires one tablespoon to be equivalent to one egg whereas Orgran requires only 1 teaspoon as one egg. Take note that this is not gluten-free. Read more about this product.

There are plenty of egg substitutes available for baking or preparing a dish that calls for eggs. If a recipe calls for three or more eggs, it is important to choose a replacer that will perform the same function (i.e. binding or leavening).

Powered Egg Replacer:
• Egg Replacer is a reliable egg substitute for use in baking. It is available at health food stores and most grocery stores.
• Trying to replicate airy baked goods that call for a lot of eggs can be very difficult. Instead, look for a recipe with a similar taste but fewer eggs, which will be easier to replicate.
• Powdered egg replacers cannot be used to create egg recipes such as scrambles or omelets. Tofu is the perfect substitute for eggs in these applications.

Tofu:
• Tofu is great for egg substitutions in recipes that call for a lot of eggs, like quiches or custards.
• Tofu is also a great substitute for eggs in eggless egg salad and breakfast scrambles.
• Be sure to use plain tofu, not seasoned or baked, as a replacer.
• When adding tofu to a recipe as an egg replacer, be sure to purée it first to avoid chunks in the finished product.
• To replace one egg in a recipe, purée 1/4 cup soft tofu. It is important to keep in mind that although tofu doesn’t fluff up like eggs, it does create a texture that is perfect for “eggy” dishes. 

In Desserts and Sweet, Baked Goods:
• Try substituting one banana or 1/4 cup applesauce for each egg called for in a recipe for sweet, baked desserts. These will add some flavor to the recipe, so make sure bananas are compatible with the other flavors in the dessert.
• If you want a lighter texture and you’re using fruit purées as an egg substitute, add an extra 1/2 tsp. baking powder. Fruit purées tend to make the final product denser than the original recipe.

Other Egg Replacement Options
• If you’re looking for an egg replacer that binds, try adding 2 to 3 Tbsp. of any of the following for each egg: tomato paste, potato starch, arrowroot powder, whole wheat flour, mashed potatoes, mashed sweet potatoes, instant potato flakes, or 1/4 cup tofu puréed with 1 Tbsp. flour.
 
• 1 egg = 2 Tbsp. potato starch
• 1 egg = 1/4 cup mashed potatoes
• 1 egg = 1/4 cup canned pumpkin or squash
• 1 egg = 1/4 cup puréed prunes
• 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
• 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
• 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again
